mammag replied: I've started boiling some ahead of time and putting them in tupperware so I can pull it out and make a sandwich with fat free mayo or the kids love to make up some Chicken Quesadillas with it. One of my favorites though is to make a casserole by putting chicken and a rice mix (I use Uncle Ben's vegetable rice) and a can of cream of mushroom soup. When it is almost done I put some casserole cheese and crumble corn bread on top and bake it a little longer.....sooooooo good!!!! I used to cut up carrots and celery but there is some in the veg. rice so I don't waste time with that anymore because I like it the same without.

mom21kid2dogs replied: Chicken Marsala or Chicken in white wine sauce.

mom21kid2dogs replied:
A favorite in our house, for sure!!

Chicken Parmesan

Or grill the chicken and cut it up over a salad. yummy.gif

Alice replied: Dip them first in milk, then a combo of 1/2 corn bread mix (jiffy brand is a good size) and ranch salad mix (the dry powder). Fry until light brown.

Jamison'smama replied: Poppy seed chicken is yummy----cooked chicken cut up, fat free sour cream, low fat cream of chicken soup, poppy seeds and some crushed up ritz crackers inside and on top!

I also make chicken and dumplings, Karen's crock pot chicken, stir fry, chicken lasagna--we eat chicken almost every meal.

gr33n3y3z replied: honey mustard chicken

jdkjd replied: Chicken strips dipped in yogurt or mayo and dredged in bread crumbs. Bake for 20-25 min at 350 degrees. YUM.

Also, you can dip in chicken breast or pork chops in parmesean cheese then egg then bread crumbs and bake or saute. Not that bad for you either. Parmesean cheese and other hard cheeses are relatively low in fat.

coasterqueen replied:
Okay, I want to hear more about this chicken lasagna. tongue.gif yummy.gif

Lynda836 replied: Chicken pot pie---great recipe in either looneyspoons or crazyspoons cook book

I use chunks of chicken instead of hamburger in pasta sauce.

Ruby chicken---boneless chicken breast cooked in orange cranberry sauce...real easy....can find it on the net.

Ultimate favorite...lazy enchilada casserole from companys coming lunch cookbook...took it potlucks and get raves everytime. Has cooked chicken mixed with mushroom soup, cr chix soup, sour cream and onions. Then you layer in with torn flour tortillas...meat...tortillas...meat...tortillas...meat. Then top it with Jack cheese and cook....real yummy and it freezes.

MomToMany replied: Chicken Alfredo Pizza!!! OMG, yummy!! (HERE'S a REALLY old post on how to make it!)

Thanks for all of these new ideas!

jdkjd replied:
Take a raw chicken breast or boneless pork chop
Put a handful of shredded or grated parmesean on a paper plate
Have a bowl with a egg with a little water stirred up in it
Have a paper plate with breadcrumbs (I like Progresso Italian Breadcrumbs)

Press meat into parmesean
then dip in egg (or mayo or yogurt)
then press into bread crumbs.

Place breaded meat into large saute pan with about 3 tablespoons of olive oil or enough to cover the bottom of the pan well (on Medium Heat-oil should be very hot)

After browning on both sides until very brown, place on a cookie sheet and bake for 10 minutes at 350 degrees.

Just had this last night-very good. Each serving is about 7 WW points.

3'smom replied: Put boneless chicken breasts in the crockpot and pour a large jar of salsa over them. Cook on low till done. This is so good and you can eat it as it is or put it in tortillas.

redchief replied: General Tso's Chicken... it's a pain in the butt though.

Sarah&Mackenzie replied: I make my own chicken nuggets with them YUMMY!!!

toothytracie replied: I like making chicken pot pie with bisquit as the crust and I like putting cream cheese, cream of chicken soup and chicken in the crock pot. I have TONS of chicken recipes for the crock pot if you want them.
