okie dokie...so I've got some

Wanting something simple, but tasty!

booey2 replied: Here is a real simple one:

Preheat oven to 425

1) put the breast frozen in an oven safe dish, 4-5
2)cover with either pasta sauce, tommatoe sauce or tommatoe soup
3)cover dish with foil
4) cook for 50-60 mins and serve

I use to shred some cheese and put it over the top of the chicken for the last 15-20mins.

It is delicious with rice, pasta or potatoes.

It is and it is so easy, once the chicken is in the oven you have about 1hour to wait so I use it to spend time with the boys. My aunt gave me this recipe almost 8 years ago now, we were visiting for a family party or something and her youngest was real picky and she pulled this out of the oven for her so I asked what it was and viola I now have the recipe.

Chicken breasts...hmmmm!

King Ranch casserole, Chicken and Rice skillet bake, Baked chicken, BBQ chicken, Chicken Kiev, Cordon Bleu, Stir fry, Chicken and dumplings (had that last night yummy.gif )

Any of those sound good? I can get you some recipes if you want. I have a good one for King Ranch casserole that is really easy. wink.gif

Aimee...what's the one you have for the king ranch casserole..never heard of it..but the name intrigues me!

3 Chicken breasts cooked and shredded
1 can chicken broth
1 can cream of mushroom
1 can cream of chicken
1 can ro-tel
2 cups shredded cheese (Mexican blend)
1 bag Salsa Verde doritos

Combine the chicken broth, cream of mushroom, cream of chicken and ro-tel in a medium bowl.

Spread half the bag of doritos in the bottom of a 9x13 pan and sprinkle chicken on top. Add soup mixture to the pan. Top with remainder doritos and Shredded cheese.

Put in a 350 degree oven for 30-40 mins or until hot and bubbly.

It is SO YUMMY!!! I would get the mild ro-tel, though b/c it tends to get spicy. happy.gif

Ro-tel tomatoes. You can get them on the canned tomato aisle. Ever heard of Ro-tel cheese dip using Velveeta and ro-tel tomatoes? If not, you should try it sometime. thumb.gif

laugh.gif You can tell we live in different parts of the country. King Ranch is a ranch in Texas. I think it is the biggest in the U.S. (or used to be) I have no idea why this dish is named after that ranch. tongue.gif

Oh.. and I think Ro-tel is regional. I never saw it when I lived in the midwest. If you can't find that brand, it's just diced tomatoes with jalepenos ... you could just get a little can of them and toss it in with a can of diced tomatoes.

I didn't know you could make King Ranch with doritos... we use torn up white corn tortillas. Man I love that stuff!! Just another Texas thing I love... like today's weather!

Mommy2BAK replied: Ya know thats really funny that you ask what Ro-tel is, in my family and everyone around here (I live in Arkansas) it is always in stock in our homes. But if you ask someone from another part of the country what it is they usually don't know.

BTW, I think I am going to make that King Ranch recipe. Thanks Amiee, I used to eat that when I was younger, and I loved it. thumb.gif
