christmas day menu - tell me yours

CantWait replied: Besides the usual, I'm adding the broccoli bake that I did for Thanksgiving. Boil the broc. put in a pan with stuff and such stuffing over it (it's suppose to be cooked first, however I didn't), then pour mushroom soup over and bake in the oven.

luvmykids replied: We usually do ham but this year I'd love to do a prime rib...we'll see. Sides are usually cranberry sauce, mashed potatos, sweet potatos, and some kind of veggie, usually asparagus. We also have a ton of Mexican food, posole, tamales and chile.

jcc64 replied: I can't bear anything that too closely approximates what we just had for Thanksgiving. I was eating the left overs for days! I saw a really good Food Network special that had an "all-star" meal prepared by well known chefs. Bobby Flay made a lobster risotto that had dh and I salivating. I'm thinking we're going to start with that and also make a warm spinach and goat cheese salad, and a few other dishes.
I also have to do Christmas Eve! Though I love having family and friends around me during the Christmas season- does it always have to be at my house! rolling_smile.gif

I go all out for Christmas Eve dinner only, not xmas day. I make something fancy and usually get a cut of meat that I wouldn't typically buy throughout the year. One year lobster (live), another year braised duck, another prime, next was beef fillet w/red wine reduction sauce, another year I made a cioppino (seafood stew w/mussels, etc), last year was lamb chops w/herb and cornmeal crust. I can't make up my mind for this year.....But I have gone through all my Bon Appetit magazines and marked pages of recipes I liked. It's so hard to decide! We're big foodies in our house, plus I have my FIL coming, who is the biggest foodie of all, but he says he always likes my cooking. smile.gif

jcc64 replied: Rae- my dh is a big foodie too- at least in his head. We have piles of Bon Appetit, and they usually only come out on the holidays. Neither one of us has time to deal with gourmet meals during the week. As it is, we don't usually sit down to eat before 8pm.

I have no idea what I'm doing yet, but it will probably be simple. A ham maybe? Although prime rib does sound good, too.

mysweetpeasWil&Wes replied: I have a great recipe for prime, or really any roasted meat. Leg of lamb is great this way too. So easy as well.

Take the prime and either coat the outside with egg whites or olive oil. Mix together kosher salt, chopped fresh thyme and rosemary, chopped garlic and ground black pepper (or you can use the whole peppercorns). Make a paste out of the mixture and coat the outside of the prime so that it makes a crust. Roast in shallow roasting pan...I don't know the temperature and timing off the top of my head, but use a meat thermometer. There is a technique where you roast the meat on a really high temperature for about 30 minutes at first to sortof seal the outside, then you bring the oven down to a cooler temperature and roast for a couple hours, slowly. I did this with my turkey this year. It is soooooooooo good! wink.gif Serve with pureed root vegetables or acorn squash!

One year, my mom did a standing rib roast- that was unbelievably good. It also happened to be the year my dad had bypass surgery, and was recoverin in the hospital on Christmas Day. They we were at home, doing our best to max out our saturated fat consumption while my dad was eating jello in a cardiac unit! rolling_smile.gif (we did go see him after dinner.)
