Side dish ideas?
HuskerMom wrote: Dh and I are going to the racers banquet next week that they have every year after the racing season is over. I'm supposed to bring a side dish and have no clue what to bring. Any ideas or recipes to help?

Jamison'smama replied: I love corn casserole and cheesy potato casserole.
mom21kid2dogs replied: I have a great potato recipie but it only would work if you were serving it hot. Is this banquet close or do you need something that travels well?
MommyToAshley replied: Can I have the recipes for your caseroles... Aimee, Brenda, and Cheryl... please.
Maddie&EthansMom replied: Yes. But I'm warning you, you might have trouble keeping yourself from eating the entire dish! I'm making it for dinner tonight, btw. It's very fattening, but oh so good!!
Ingredients 1 (15 1/4-ounce) can whole kernel corn, drained 1 (14 3/4-ounce) can cream-style corn 1 (8-ounce) package corn muffin mix (recommended: Jiffy) 1 cup sour cream 1/2 cup (1 stick) butter, melted 1 to 1 1/2 cups shredded Cheddar
Directions Preheat oven to 350 degrees F.
In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

Jamison'smama replied: My Corn Casserole is very simiar to Aimee's and since I often forget to buy the dip, I sub in sour cream it is is very yummy.
1/2 c butter 8 oz onion dip 1/8 tsp pepper 3 eggs 1 can whole kernal corn drained 1 can cream corn 1 box jiffy mix
mix eggs until foamy, add in most of butter (save enough to butter the pan), dip, pepper, mix. Add corns, add jiffy mix and put in 8x10 buttered dish.
Bake approx 30 min at 350 until it gets a little "springy" in the center
HuskerMom replied: Thanks for all the ideas! I'm sure I'll be able to come up with something.
mom21kid2dogs replied: Here's one we LOVE! Note: Because the butter is only used to coat the potatoes, I use half of what they call for. Otherwise it's dripping in butter. http://www.foodnetwork.com/recipes/the-nex...cipe/index.html
