Question about pumpkin pie

The eggs do set the pie, not the cream cheese. The cream cheese just adds a richness to it.

redchief replied: I'm sure the cheese is necessary to help the pie set. My mother uses condensed milk. If you want more info on that I can get it for you. If you're wanting to go completely milk-free, I read this suggestion on a milk allergy page (Kaitlin is sensitive to lactose):
Jello "cookable" vanilla pudding mix (not instant) with soy milk. Add 3 tablespoons of pudding mix to 3/4 cup of soy milk to get the equivalent of 3/4 cup of the other milks.
Edit: BTW, We haven't tried this yet so I don't know how well it works. Let us know if you try it and how well it worked!
mysweetpeasWil&Wes replied: Thanks! I left out the cheese, but added half and half...hoping DH won't notice. He's not allergic, he just gets too flemmy from dairy. I'm worried now, but I imagine the eggs will work to set it. I will let you all know! Ed, we do drink a lot of soy milk in our family, but I tried to make pudding using soy milk once and it didn't set!! So I don't know. I should have tried making this pie a few days ago!
BTW, Martha Stewart would be so disappointed in me...my homemade crust looks horrible and the filling is spilling over the edge!!

jcc64 replied: Traditional pumpkin pie doesn't have cream cheese in it. I think it has evaporated milk? Anyway, I usually just follow the recipe on the can of Libby's and it always comes out fine. Kinda hard to mess up, like chocolate chip cookies!

mysweetpeasWil&Wes replied: OMG 9 pies!! You must have the recipe drilled into the back of your head! I only have my FIL coming over so that's why there is only one. Well it looks like it set pretty well even without cream cheese or evaporated milk. It does have lots of eggs and half and half, so I guess that worked! I hope it's good. If not, I'm also making a fresh pear tart. Just haven't gotten to it yet!
