Need meal idea

stella6979 replied: I love chicken breasts! I actually found a very simple, but tastey recipe the other day.

Preheat oven to 400 and place the chicken in a slightly greased baking dish. Add some cream of chicken soup and croutons and let it bake for about 45 - 60 minutes. The croutons soften up and it's almost like stuffing. All three of us really liked it.

You just add some garlic powder & onion powder to some sour cream and mix. Dip both sides of the chicken in the sour cream mixture and then coat the chicken with crushed potato chips.

MagnoliaDreams replied: I'm the same as you, I love chicken, but get tired of the same old stuff all the time! I wish I could help but everything that comes to mind, is the same old kinda stuff. You could do a stir fry or something of that sort, or chicken fajitas.

Heat oven to 350, brush BBQ sauce on them, add bacon strips to the top of each one. Bake until juices run clear, remove from the oven and add chopped tomatos and shredded cheddar cheese thumb.gif

Parmesan chicken: Shake n bake the breasts.. cook pasta at the same time. When chicken is done take out top with a spoon ful of sauce, shredded mozz cheese and parmesean cheese put back in to melt cheese. take out and put remaining sauce on pasta when done cooking.. YUMMY

Take some chicken breasts and place in casserole dish. in a bowl mix some sour cream, mayo and honey mustard. Top chicken breasts and cook for 1 hour.

brushetta bake: cut chicken in bite size cubes. place in casserole dish. sprinkle on top parsley and mozz cheese. in a bowl mix i pkg of stuffing for chicken and i can of stewed tomatoes. place on top of chicken and bake for half hour at 400. take out and sprinkle cheese and place back in till melts

Place chicken in cassrole dish. in a bowl mix 2 cans of cream of chicken soup and ketchup... more ketchup more tangy. place over chicken and bake for 1 hour at 350.

place chicken in casserole dish. in a bowl place half bottle of ketchup( small bottle) and a bottle of your fave chicken n rib BBQ sauce, add 2 tbsp of mustard, 1 cup vinegar, and 1/2 cup brown sugar. and half onion diced. pour over chicken and bake for 1 hour at 350

BBQ Chicken Salad Sandwich

INGREDIENTS
•1 1/2 pounds skinless, boneless chicken breast halves
•1/2 cup barbecue sauce
•1 cup mayonnaise
•1/2 cup finely chopped onion
•1/2 cup chopped celery
•1/4 teaspoon salt
•1/4 teaspoon crushed red pepper flakes
•8 Kaiser rolls, split
•8 tomato slices
•8 lettuce leaves
DIRECTIONS
1.Place the chicken in a large resealable plastic bag; add barbecue sauce. Seal the bag and turn to coat. Refrigerate overnight.
2.Grill chicken, covered, over medium-hot heat for 6-8 minutes on each side or until juices run clear. Cool; cover and refrigerate chicken until chilled.
3.Chop chicken; place in a bowl. Stir in the mayonnaise, onion, celery, salt and pepper flakes. Serve on rolls with tomato and lettuce.

This one is DELISH!!
Chicken Eugene
INGREDIENTS
•1 (2 ounce) package chipped beef
•6 skinless, boneless chicken breast halves
•1 pound sliced bacon
•1 (10.75 ounce) can condensed cream of mushroom soup
•1 (16 ounce) container sour cream
•1/2 teaspoon paprika
DIRECTIONS
1.Preheat oven to 275 degrees F (135 degrees C).
2.Line the bottom of a 9x13 inch baking dish with slices of chipped beef. Wrap bacon slices around chicken breasts, and place on top of chipped beef. In a medium bowl, mix together condensed soup and sour cream. Pour sour cream mixture over chicken breasts, and sprinkle with paprika.
3.Bake in preheated oven for 2 hours.

Chicken Florentine

4 boneless, skinless chicken breasts
1 box of frozen spinach (thawed)
1 container of cream cheese
1 bag of shredded parmesan cheese


Beat chicken breast flat (works well if you place wax paper over chicken). Pat chicken dry with paper towel. Mix together ½ of the spinach, all of the softened cream cheese and ½ bag of parm cheese, salt and pepper to taste. Mix well. Spread a generous amount onto each chicken breast. Roll the chicken breast up (if it is beaten flat, it should be relatively easy to roll up). Wrap each prepared piece of chicken in aluminum foil and place on baking sheet. Bake @ 350 for 45 minutes. Remove from oven. Remove foil. Spread small pat of butter across the top of each piece of chicken(spray butter works well for this) and then sprinkle remaining parm cheese over butter on each piece. Place in oven for another 15-20 minutes. Remove and serve with garlic Mashed Potatoes!

Chicken Curry Supreme

Large bag of frozen broccoli florets
2 cans of cream chicken soup
1 can of cream of mushroom
Curry Powder to taste
1 cup of Mayo
5 boneless, skinless chicken Breasts –cubed and boiled
Splash of lemon juice


Cut chicken into cubes and boil until cooked. Cook Broccoli.
While Chicken is cooking, mix soup, curry powder, mayo and lemon juice.
Mix well.

Drain Chicken; place chicken in casserole dish- Layer broccoli on top of chicken, then pour soup/mayo mixture over top. Bake at 350 for 1 hour.
You can layer cheddar cheese on top of soup mix if desired.

Tastes great served over rice.


This next one is super easy and super yummy too!

Ritz Chicken Casserole

5 chicken breasts (cut, boiled)
16 oz sour cream
1 can cream of mushroom soup
1 can cream of chicken soup
2 sleeves of Ritz Crackers
Poppy seeds (optional)
Butter

While cooking the small, cubed pieces of chicken, mix together soups and sour cream add some salt and pepper to taste. Drain Chicken. Pour chicken pieces into a casserole dish, layer soup/sour cream mixture on top of chicken and fold into chicken…mixing well. Crumble Ritz crackers on top of casserole and sprinkle poppy seeds on top of crackers. Place small pats of butter all over the top of the casserole. Bake @ 350 for one hour or until crackers are browned.


Now...I'm off to figure out what I'm going to make for dinner!! LOL

Cece00 replied: I just made chicken fettucine, it was GREAT.

Its a low fat recipe, not made like you'd think, but tastes JUST like the fattening version.

8 oz fettucine noodles (you could use anything though)
1 1/4 c chicken broth
4 tsp flour
1/3 c low fat cream cheese
6 tbsp. parm cheese
seasonings

I also added some skim milk to thin it out a little, it was thick to me...

cook pasta

combine broth & flour over med heat
stir in cream cheese and parm cheese

sitr constantly with wire whisk until mixture boils & thickens....this is where I added the milk...and chicken...I cooked the chicken in another pan.

I was doubtful it would be as good but it really was.
