All should be organic and NOT peeled...much of the nutrients lie in the skin. Just be sure to scrub them well as they are all root veggies. The ginger gives it a bit of a zing but if you add too much it will be too zingy. Kids will love the color of this drink and it is so healthy yet so sweet. And if you have any digestive problems, ginger is very good for that. Just thought I'd share, it is SO good, it's literally the best juice I've ever had.

cameragirl21 replied: yeah, I didn't think in terms of stained clothing, T, you are right, it's best to give this to kids when they're stripped down to their undies or wearing very dark clothes. I think if you put it in a sippy cup it should be ok, though. Di, I'll make some more tomorrow and post a pic for you. I actually don't care for beets as my mom used to make borscht, this Russian beet soup a lot when I was a kid and I HATED it so beets are never big on my cravings list but I decided to give this a shot and was shocked to see how much I like it and my mom was even more shocked when I called her and asked her if it's so terrible that I am eating raw beets without peeling them, as a good friend said I should peel them first and sorry but I'm too lazy to do that. And my mom, after her initial reaction of, "YOU are eating beets??" and wondering who I am and what I did with her daughter, was the one who told me that all the nutrients are largely in the skin, just make sure to scrub them well. So if someone who hates beets loves this, just imagine how good it must be to those of you who like beets....

CantWait replied: Totally off subject as I don't have a juicer. However I was the same was as a kid, grandma use to make borscht ALL the time, and I thought it was the nastiest.
Than, the day, and I mean the day I got here a lady a couple houses down make "soup" and invited everyone working on the haunted house in for some, she invited me cause I was new and hubby was helping out, so I went in, little did I know it was borscht. OMG though it was SO GOOD. The beets were shreded instead of chunks like my grandma use to make, there were carrots in it, and it wasn't so beaty. I was impressed.
luvmykids replied: I HATE beets to eat, but when I make juice I use them a lot. Usually they're pretty well masked by the other ingredients I can't imagine the combo of ginger and beets, but it does make me want to dig out the juicer to satisfy my curiosity!
