MY FAVORITE FRESH APPLE BUNDT CAKE

1 1/2 c. salad oil
1 c. sugar
1 c. brown sugar
3 eggs
3 c. flour
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon
1/2 tsp. nutmeg
2 tsp. vanilla
1 c. chopped pecans
4 c. chopped apples

Mix oil, sugar, eggs, well with vanilla. Sift flour, salt, soda, cinnamon and nutmeg - gradually add to egg mixture. Stir in nuts and apples. Pour into greased or sprayed Bundt pan. Bake at 350 degrees approximately 1 hour (or test with toothpick). Very moist - remove carefully. Frosting optional:

1/4 c. butter
1/2 c. brown sugar
2 tbsp. milk

Bring to boil in saucepan 2-3 minutes.

Little powdered sugar to thicken

Cool; then drizzle over cake.

My MIL's dh made the best food when we camped with them, stuff I never would have thought of for camping....fried chicken, spaghetti and meatballs, etc. I'll never think of campfire food the same again laugh.gif

I think outside the box. Last time we went I cooked a roast and potatoes with carrots.
I always make a really good cake. And the first day we always have a Ham and mac and cheese. I think its turned into a tradition. Someone always goes there early so they have to cook the ham.

5littleladies replied: Yummy! I make a cake very similar to that-We call it Apple Dapple cake. happy.gif

bawoodsmall replied: ok lisa I am baking it right now. I am kinda wondering though because it is like super thick...not like normal cake consistency. I actually addded more oil because it was to dry. That was 1/2 cup oil right. We shall see in about an hour. I can always try again but I had my heart set on it...it sounded so yummy.

Be back in a hour with results.

bawoodsmall replied: Well somehow it did turn out. God must have had some say it that because let me tell you I was really afraid for it but it is so yummy. Thanks for the recipe lisa. It will be a staple in our house. biggrin.gif

lisar replied:
Glad it turned out for you. I am actually cooking it tonight. I didnt wanna make it to early to take camping.

bawoodsmall replied: is it always that thick or was it a miracle it came out?

lisar replied:
From what I remember its normally thick. But I dont think its normally as thick as you are making it sound. I would have had to seen it KWIM? Now I just noticed that you only put 1/2 cup oil. Its 1 and a half cups of oil so that might have been the problem.

mommymommy replied: THat sounds so good!
Thank you for sharing the recipe!!
I will have to try it!

bawoodsmall replied:
Aha! I had a feeling it was the oil!!!!!! I will do it right next time. I am lucky it turned out. Both Aiden and Em were helping.

lisar replied:
How did it taste though?
