Mix oil, sugar, eggs, well with vanilla. Sift flour, salt, soda, cinnamon and nutmeg - gradually add to egg mixture. Stir in nuts and apples. Pour into greased or sprayed Bundt pan. Bake at 350 degrees approximately 1 hour (or test with toothpick). Very moist - remove carefully. Frosting optional:
1/4 c. butter 1/2 c. brown sugar 2 tbsp. milk
Bring to boil in saucepan 2-3 minutes.
Little powdered sugar to thicken
Cool; then drizzle over cake.

My MIL's dh made the best food when we camped with them, stuff I never would have thought of for camping....fried chicken, spaghetti and meatballs, etc. I'll never think of campfire food the same again
lisar replied: I think outside the box. Last time we went I cooked a roast and potatoes with carrots. I always make a really good cake. And the first day we always have a Ham and mac and cheese. I think its turned into a tradition. Someone always goes there early so they have to cook the ham.

bawoodsmall replied: ok lisa I am baking it right now. I am kinda wondering though because it is like super thick...not like normal cake consistency. I actually addded more oil because it was to dry. That was 1/2 cup oil right. We shall see in about an hour. I can always try again but I had my heart set on it...it sounded so yummy.

lisar replied: From what I remember its normally thick. But I dont think its normally as thick as you are making it sound. I would have had to seen it KWIM? Now I just noticed that you only put 1/2 cup oil. Its 1 and a half cups of oil so that might have been the problem.
