Easy meal ideas - for a man

rice.. mixed with a can of mushroom soup and porc chops, with green beans, peas, carrots, broccoli, any veggy really except potatoes or corn cuz you already have more than enoiugh starch with the rice

chicken breasts, cubed potatoes in a pan with italian seasonings.. (roasted..lol) and green or orange veggies

roast in a crock pot with potatoes and carrots and onions

spaghetti and meatballs

KD and ground beef

tuna casserole..pasta, white sauce (basically melted margarine, flou and milk) and peas, with tuna

shrimp and misc veggies for a stir fry...can use chicken of beef strips too

chili

sheppards pie

salads

I have this magazine and the kids have liked all the recipes. It would be so easy for him to just throw something in and not have to worry about it. Something halfway healthy would be nice.

My favorite is a ground beef, rice and zucchini casserole, with tomatos and mozerella cheese. I also like the tuna noodle casserole with chips on top (not so healthy, but fun LOL) If either of those sound like something they'd eat, I'll post the recipes.

Hillbilly Housewife replied: oh...should probably mention that pretty much any combination of rice (cooked), veggies, meat (also cooked) in a casserole dish with a can of cream soup is generally A+

Steak fingers

2 lbs flank steak, cut into strips
2 tsp cumin
2 tsp coriander
2 tsp paprika
1 tsp garlic salt
1 pinch black pepper

Mix dry ingredients in large resealable bag, add steak strips, shake until well coated. Refrigerate 20 mins. Arrange strips on lightly greased cookie sheet, broil for 5 minutes on each side or to desired doneness. Serve with Ranch dressing as dipping sauce.

And Sherri, here's the Zucchini Rice Casserole, my kids really love it.
1lb hamburger
1 medium onion, chopped (about 1/2c)
3/4 c uncooked rice
1c water
1 medium zucchini (I use 2), cut into 1/4 inch slices
1 large tomatoe, chopped
1 can Progresso (or 1 box Campbells premium) tomato basil soup
(The kind you don't add water to)
2 c shredded mozarella cheese

Cook ground beef and onion in skillet and drain. Sprinkle with salt and pepper.

Place rice and water in baking dish, stir to mix. Layer cooked beef, zucchini slices and tomato over rice. Pour soup over top. Cover dish with foil.

Bake at 375 for 40 minutes, uncover, add cheese. Bake uncovered another 10-15 minutes until edges are bubbly and cheese is melted.

1 large can kidney beans, rinsed and drained
1 large can diced tomatos
1 lb ground beef, browned
Sesonings to taste (salt, pepper, cumin, chili powder, etc)
onion, diced, to taste

Brown ground beef and onion. Drain. Add beans, tomatos and seasonings...bring to a boil, then turn heat to low, cover and simmer. Serve with saltines or tortillas.
