Dinner ideas for tonight

My Aunt and uncle and their two kids are in town and I am entertaining them tonight and I need some good ideas for dinner. What could I make? I will be cooking for 9 people. 3 of which are kids around the age of 10. (my mom and other aunt and sister are coming too, along with me & DH) Please help me with some good ideas, I am gonna go grocery shopping in a few hours so let me know quickly please

coasterqueen replied: Hmmmm sounds like I'd go with something in the crockpot. Sorry I don't cook, DH does. I'd freak out if we had that many people to feed. The only time we have to do that is for the holidays and well we feed them turkey, lol.
What about steaks, baked potatoes, a veggie and/or salad?
ammommy replied: Lasagne is always safe and easy for large numbers. If they aren't big beef eaters, you can used chopped up chicken instead.

Kirstenmumof3 replied: I made Ham and Scalloped potatos for supper last night. There was more than enough to feed the 5 of us that we are having the leftovers for supper again tonight. I often make this, because we have students and I need to make big meals. It's always a big hit with the kids. Let me know if you want the scallped potatoes recipe. You could always add a tossed salad and some cooked veggies to complete the meal.

But my favorite thing to serve when I'm having company is Chicken Florentine. You take a boneless skinless chicken breast for each person and beat it until it's very thin, then you spread a mixture of thawed frozen spinach,cream cheese,mozz chese, shredded parm cheese and pepper onto each breast, then roll it up and put a tooth pick in it to hold it in place while it cooks. Once it's rolled up, you put a pat of butter on top of it and sprinkle with parm cheese, then bake for about 45 minutes.
I serve it with garlic mashed potates and a salad.It's ALWAYS a hit!!! and pretty simple!
For the kids you could do chicken tenders or something simple.

I was going to suggest lasagne too... it's super easy and almost everyone likes it. Spaghetti would be good too.

Allyson&Patrick'sMom replied: What about a Roast Beef, you could cut it and stuff it with herbs and roll it back up and tie it with twine. Cook it until it is done to however you like it...med rare inside.
Serve with Fresh steamed green beans and Mashed Potatoes seasoned with the same herbs as the roast.

Boys r us replied: I usually set the oven to 350, I'd prefer it cook a lil slower and not be tough!
I usually use some sort of seasoning on the chicken so it has a little flavor..I change it up as to what kind I use. Sometimes I just sprinkle each breast with salt and pepper b/f I put the mixture on it. and you have to be sure to beat the chicken out pretty flat if you're going to roll it, the other option is to slice the breast open long ways(like butterfly it) then put the mixture inside it..either way works fine. The spinash, I use one small "box" of the frozen spinach and I never end up using the whole thing. you want it to be good and spinachy, but you'll be able to feel your way through this, there is no REAL recipe with measurements that I use, I just put in what looks right.
