calling all cooks

MommyToAshley replied: I am not good at planning meals ahead of time, and not real creative either blush.gif , but I just wanted to say that you might want to include some things like soups or casserols that you can make in large batches and have for a few days or freeze. It really cuts down on how often you have to cook.

I will be interested in everyone's ideas.... I might try a few out if they are easy enough to make. biggrin.gif

akbutterfly83 replied: Nachos... brown so hamberger, spred on top of chips, add cheese, onions, and what ever else you like, put in oven until cheese is melted.... then add sour cream, jaholpinos(sp?), and the cold stuff....

kit_kats_mom replied: Here is a copy of a regualr weekly menu for us. I made up about 5 different ones and we cycle though them. We now have substituted Pizza one night a week but I still keep the stuff on hand for the nights that I don't feel like cleaning the kitchen. Most of it is really easy and good for you. When It says chicken, I usually use differnet ways of cooking it. I've put cajun seasoning on it, lemon pepper and broiled it, baked it etc. I'm a lazy cook during the week. Can you tell?

Tues:
Breakfast: peanut butter toast & banana or cereal or oatmeal
Lunch: Chicken salad/bread/carrots/pretzles/fruit
Dinner: spaghetti/salad
Snack: Yogurt with Granola

Wed:
Breakfast: peanut butter toast & banana or cereal or oatmeal
Lunch: tuna salad/pita/fruit/carrots/yogurt drink
Dinner: Cajun chicken sandwich/tomato soup/salad
Snack: Fruit Cup

Thurs:
Breakfast: peanut butter toast & banana or cereal or oatmeal
Lunch: ham & cheese Sandwich/Tomato soup/cantelope/pudding
Dinner: Lean Cuisines/salad/bread
Snack: Yogurt with Granola

Fri:
Breakfast: peanut butter toast & banana or cereal or oatmeal
Lunch: chef salad/bread/carrots/pretzles/fruit/pudding
Dinner: grilled cheese and tomato soup and salad
Snack: Fruit Cup

Sat:
Breakfast: peanut butter toast & banana or cereal or oatmeal
Lunch: ham & cheese Sandwich/Tomato soup/cantelope/pudding
Dinner: Chicken/mashed potatoes/snap peas/salad
Snack: Yogurt with Granola

Sun:
Breakfast: peanut butter toast & banana or cereal or oatmeal
Lunch: Out
Dinner: Fish/salad/cous cous/broccoli
Snack: Fruit Cup

Mon:
Breakfast: peanut butter toast & banana or cereal or oatmeal
Lunch: ham & cheese Sandwich/Tomato soup/cantelope/pudding
Dinner: Chicken breasts/broccoli/salad/cous cous
Snack: Yogurt with Granola

catou_98 replied: I just made a big pot of chili tonight, I always find it an easy to do meal and you can freeze it too! wink.gif mine is pretty easy

2 medium onions
2 medium green peppers
about 1 pound of ground beef
1 can whole plum tomatos(that I cut in peices)
1 can red kidney beans
1 envolpe chili spice(clud house has a good one!)

you cook the meat first(drain if needed) add all the other ingredients(exept kidney beans) and let simmer for about an hour, when ready add kidney beans cook an extra 5 mins or until beans are warm...that's it......pretty easy to do and if you have a crock pot well then by all means go ahead and use that instead! wink.gif

I usually serve some crustred bread to go with that! YUMMY yummy.gif

Alice replied: These aren't really recipes, more like ideas:

- Chicken cutlets w/ Stovetop Stuffing & veg

-linguini & clam sauce

-fettucini alfredo w/ chicken (just saute some tenderloins & throw them in)

-meatloaf (I use the recipe on the Lipton Soup box)

-lasagna (no-boil noodles, recipe on box)

-Chicken Rizutto: take cutlets, dip them in egg, then in a mix of flour & breadcrumbs. Fry them in a little oil. Put them on a baking sheet; pour some balsamic vinegar onto each cutlet; turn and pour more vinegar (just a bit, to cover the cutlet) Cover with grated mozzerella cheese. Put into oven and heat until the cheese melts.
I normally serve w/ mashed potatoes & a veg

-Meatball Parmesean heros

I have lots of easy recipes (real recipes I mean.) But I'm busy planning Family NIght for our nursery school. After March 12th, when my life is my own again, I'll start posting them.

Celestrina replied: One of the best things I ever bought was a crock pot. just throw in what you want and let it cook overnight. People are always asking me to make pulled pork barbecue. Spray the inside lightly with cooking spray. Put 1/2 cup of frozen chopped onions on the bottom. Then 2lbs of pork loin (keep it whole). Top with one bottle of your favorite bbq sauce. 8-10 hours on low. When it's done, just pull the pork apart and mix. The finer you shread the pork the better. Have some good rolls handy and you're good to go.

Boys r us replied: I'll tell you what I bought at the store that is FANTASTIC! It's called Bertolli complete Skillet for two..they have chicken alfredo, shrimp scampi, chicken parm. It's allready cooked the noodles and everything, toss it in the skillet and het it for 5 minutes and it's done and amazingly good, it's sort of the gourmet frozen food..lol!
You don't add water, nothing..just a skillet!

other than that, a pot roast, so easy!!! Cut up a few potatoes and throw in some baby carrots and onions if you wish, 4 cups of water, 2 packs of lipton onion soup mix, I put worchtershire also and a little A-1, about a 3 or 4 pound roast..cut the crock pot on low before you leave for work in the morning and when you get home..Dinner's ready

chicken quesadillas:

flour tortillas
chicken breast-cooked & cut in strips(or the precooked kind from teh meat section for fajitas)
bell peppers
pepper jack and cheddar cheese(shredded)
Fajita seasoning

I have a quesadilla maker, but you can cook them in a skittel with a tiny bit of olive oil rubbed on the skillet with a paper towel.

I put 4-5 chicken breasts in the crock pot with some enchilada sauce in the morning. THen when i am ready to make it shred the chicken and put in bowl w/ about a cup of shredded cheese and some enchilada sauce. Roll chicken/cheese mixture into tortillas and bake at 350 for 20 minutes. TOtal 3 cans of enchilada sauce and 3 cups of shredded mexican blend cheese.

Mommy2BAK replied: When I don't have time to make a dig dinner, I just make a bunch of easy stuff. One of me and John's favorite is Hamburger Casserole, something that my mom used to make. yummy.gif

Hamburger Casserole:

1. 1 pound of hamburger
2. half can of green peas
3. 1 can of cream of mushroom soup

Now, all you do is brown the hambuger meat, then add all ingredients in a baking dish. You will need to add water to make the mixture not so thick. I would say about half cup of water. Then you will need to season the mixture with lots of salt and pepper. This recipie is a little blan if you don't put enough salt and pepper.
