What's for Dinner?
Cece00 wrote: I'm cooking right now & I'm curious what you all are having.
We're having mini meatloaves (you cook them in cupcake pans...they cook SO quickly), corn, veggie fries, grapes, kiwi & bread.
luvmykids replied: I'll have to try that with meatloaf, I never realize I want it until it's too late
We're having this concoction that sounds weird but is really yummy....pasta with a can of bean soup, can of milk, can of tomatos, and cubed ham in it. Salad on the side.
Calimama replied: I had a Lean Pocket and Miabella had pineapple, soup, cheese and turkey. Weird combo.
My3LilMonkeys replied: Weird combos must be the thing of the day....we had chicken, potato pancakes, carrots and coleslaw.
3xsthefun replied: We had open face turkey sandwiches, mashed potatoes and peas.
Maddie&EthansMom replied: lemon chicken and angel hair pasta.
AlexsPajamaMama replied: turkey tacos
Cece00 replied: I do that sometimes too- when I dont feel like cooking. I just come up with different stuff for the kids to eat. They like it Their favorite is when I make breakfast for dinner....pancakes or french toast, eggs, grits, fruit, etc.
PrairieMom replied: Chili. and fresh baked bread.
sparkys2boys replied: Homemade spaghetti and garlic bread. I may add a small salad but not sure yet.
Cece00 replied: Today I am cooking
-Beef Stew (crockpot) -Honey Chicken (crockpot) -Beef Taco Bake (I'm going to freeze this one) -Chicken Fettucine (this is for lunch)
Not sure if we're having the stew or chicken tonight though.
sparkys2boys replied: MM the beef taco bake sounds yummy.. Wanna share how you make it?
Cece00 replied: Sure!
1 lb ground turkey or beef (I sometimes use beef but usually use turkey- you cant taste the difference....today I am using turkey) 1 can tomato soup (or you could use V8) 1 c salsa 1/2 c milk (I use skim) 6 flour tortillas- cut into bite size pieces 1 c cheddar cheese
Brown meat in skillet, drain. Add soup, salsa, milk & tortillas & 1/2 of the cheese. Put into casserole dish (although if you skillet is oven safe, you can just stick that in the oven). Bake @ 400 for 30 min. Sprinkle with cheese, bake 3-5 min more.
When I am going to freeze this, I cook the meat. Then I mix all the ingredients (except I put all the cheese in the mix & use fresh cheese when I bake at another date) and put into a casserole dish, then I vacuum seal it & put it in the freezer.
Then I pop it out one day, put in the fridge, and let it thaw...then I pop it into the oven at dinner time- sometimes it has to cook a little longer than 30 min, which is fine with me...and then I use fresh cheese for the last 3-5 min.
Its really good.
mysweetpeasWil&Wes replied: Meatloaf here too, but I make it with ground buffalo and lots of chopped veggies. I will make steamed brocolli on the side. Maybe a salad too.
3xsthefun replied: We are having Pigs in a Blanket and fries.
BAC'sMom replied: Pork chops, green beans and taters
luvmykids replied: OMG, that reminds me of a recipe I tried awhile back and loved and haven't been able to find again. I can't put my finger on whats different though, it's going to drive me crazy
Our Lil' Family replied: Left over spaghetti for us tonight.
sparkys2boys replied: MMMMM it DOES sound yummy! TFS! Just a question though.. are the tortilla's soggy?
bawoodsmall replied: Dh was sposed to put beef and mushroom gravy in the crockpot otherwise it will be a cereal night.
I will be using the taco bake recipe but the honey chicken sounds yummy so if you are willing I would like it please!!!!
Cece00 replied: Sort of...the ones towards the top get crunchier b/c of being in the oven. But not gross soggy.
Cece00 replied: Sure...
I put chicken in the crockpot- used about 1/3 of a container of honey (one of those ones that look like a bear...its probably about 3/4 of a cup, I'd say), about a cup of chicken stock, 2 tbl of oil, one diced onion and seasoning (whatever you like) + 1/2 c water.
Put chicken in the bottom, mix all other ingredients in a bowl, pour over chicken, cook in crockpot for 4-6 hrs on low, or up to 8 hrs if chicken is frozen.
Dark meat is better for this recipe, it wont dry out as quickly.
