Pumpkin bread and Zucchini bread - I need good recipies

That said, wink.gif I am really missing pumpkin bread and zucchini bread and since they are not known here I guess I'm going to have to make it myself. mad.gif

So... if anyone has fairly easy recipies for one or both of these breads can you please share them with me??? I had a friend of mine bring back two cans of pumpkin pie filling from her recent trip to NYC so I'm good to go I think.

Ingredients:
3 cups canned pumpkin puree 1 1/2 teaspoons baking soda
1 1/2 cups vegetable oil 1 1/2 teaspoons salt
4 cups white sugar 1 1/2 teaspoons ground cinnamon
6 eggs 1 1/2 teaspoons ground nutmeg
4 3/4 cups all purpose flour 1 1/2 teaspoons ground cloves
1 1/2 teaspoons baking powder


Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour three (3)
9x5 inch loaf pans.

2. In a large bowl, mix together the pumpkin, oil, sugar, and eggs.
Combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg,
and cloves; stir into the pumpkin mixture until well blended. Divide the
batter evenly between the prepared pans.

3. Bake in preheated oven for 45 minutes to 1 hour. The top of the loaf
should spring back when lightly pressed.

this is pretty easy and very tasty..i love this recipe - sorry don't have one for zucchini bread...smile.gif

I've never had zuccinni bread before. It sounds yummy. I just had to do a search for a recipe because you got me wanting to make some and try it.

Here's the recipe I found:
Zucchini Bread
Mix in order given:
3 beaten eggs, room temp
2 c. sugar
1 c. oil
3 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
1 tsp. baking powder
3 tsp. cinnamon
2 c. grated zucchini (peeled, if desired)
3 c. flour
1 1/2 c. chopped nuts, if desired
Bake at 325 degrees for 1 hour or until toothpick comes out clean. Makes two loaves. Frost, if desired.

If you make it before I do, can you let me know how it turns out?

CantWait replied: I have a really good recipe somewhere for pumpkin bread that I made for Thanksgiving this year with Cream Cheese icing. I'll search for it if you still need it. I have no clue where it is.

luvmykids replied: This is a pumpkin cake but is soooooo good, it's my fave for pumpkin cravings. And it's EASY!!!

1 Spice cake mix
1/2 c oil
3 eggs
1/2 c water
1 can pumpkin pie mix
1tsp cinnamon

Mix all ingredients at medium speed for 5 minutes. Butter and flour bundt pan well, bake at 350 for 40-45 minutes or until knife comes out mostly clean.

Let cool.

Glaze (Very important part of it!!)
1/4 c butter
1/2 c brown sugar
Boil for one minute, stirring continuously. Let cool, then add:
1/2 milk, beat until smooth
Add 1 3/4c powdered sugar, beat again until smooth.

When cake has cooled and been removed from pan, and glaze has set slightly, drizzle over the top and allow to set.

PUMPKIN ZUCCHINI BREAD

3 eggs lightly beaten
2 cups Sugar
1 cup canned pumpkin ( I used fresh and it works jsut as well)
1 cup butter melted
1 TBSP Vanilla
3 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ground cloves
1 cup chredded zucchini
1 cup chopped walnuts

Combine eggs and sugar, add pumpkin, butter and vanilla. Combine dry ingredients in separate bowl. Gradually add to pumpkin mixture and combine well. Stir in Zucchini and nuts. Pour into 2 greased adn floured loaf pans bake 350 degrees for 45-50 minutes. Cool in pans 10 minutes and then transfer to wire rack..
Makes 2 loaves

redplaydoh replied: Oh gosh... thank you so much these sound yummy!! I think I'll try the cake and the zucchini pumpkin bread combo. I only have 2 cans of filling so I have to ration it and so far I haven't found any place here that carries pumpkin pie filling. I'll let you know when I make it and how it turns out.

mom2my2cuties replied: If you guys have Sweet Potatoes over there, you can sub those cup for cup for the pumpkin and it will taste basically the same. A little different, but still just as good.

does anyone know if your making smaller loves hwo longt o bake for or if you need to adjust the tempature?

redplaydoh replied: I was going to make the Pumpkin Cake the other night and realized it calls for spice cake. I don't have spice cake and you can't buy it here.

The cake selection here is pitiful. You get lemon cake, chocolate cake (dry with no flavor), a marble cake, and that's about it. I had my mom express mail me a cake mix last year for Lucas' party... we had only been here a few months and when I went to look for cake mixes in the store I just started crying in the cake mix aisle bawling.gif ..... I couldn't believe there was such a limited selection.

redplaydoh replied: I forgot to add... can anyone tell me how to shred a zucchini? As I posted above I am NOT good in the kitchen and am clueless on a lot of things related to cooking/baking. I'm glad DH loves to cook!
