Adventures in Latke making.

Overall a great experience, but they weren't the best thing I ever ate before. Maybe I didn't make them right? I'll post pics.

and here is Ben chowing down. Each kid took one bite. thats it. These weren't crowd pleasers for us.

cameragirl21 replied: they are VERY good but like Karen said, they are very fattening so I usually only make them for Hannukah. But now that Tara planted that idea in my head, maybe I'll make some, a small batch and share them with the board.

My mom use to make them all the time growing up, with the onions as well, but always just called them potato pancakes. They look just like the pictures. I personally never liked them, but if they are made differently than a "potato pancake" I might be willing to give them a whirl.
my2girls replied: I like to add shredded zucchini and carrots to mine. Also use seasoned salt, pepper and garlic powder to the mix , that might make a difference.
Sometimes I use, potatoes , sweet potatoes, carrots and zucchini all together as well.

Tara looks right to me. Did you use sour cream or apple sauce as a side?
cameragirl21 replied: Tara, you get matzo meal at any grocery store in the ethnic foods section. Idk if flour would be wrong per se, but we always use matzo meal, it does make a difference. I also always add shredded cheddar, which no recipe calls for and you can't taste the cheese but the extra fat makes them yummier and helps them stick together. I'll make some and post my own recipe, that I simply altered slightly from a Jewish cookbook that uses the traditional recipe from way back in the day and take a pic for you guys. I'll try to do it this weekend, oh, what I go through for you guys, now I have to eat yummy latkes when it's not even Hannukah, sigh....

jem0622 replied: Very good friends of mine make them, and no matzo meal is used. Just an egg, onion, and potato. It is important that the onion and potato be shred finely. The egg really holds it together...not the flour.
It is messy, but they are oh so good! Just salt them and have the sour cream and applesauce handy.
